Homemade Hi Tech Nutrients

I love to play mad scientist in the kitchen. I am always whipping up something new nutritionally just for fun. Well the last couple weeks I have been playing with homemade hi tech nutrients.
What does Hi Tech mean when it comes to food? Usually I am trying to solve a problem or meet a need that is currently not being met economically in the local marketplace. Sometimes it is meeting a need that is not being addressed at all. For instance my line of Miracle Bred mixes was the first too meet the combined need for a gluten free product and a low carb product. There are tons of gluten free replacement products on the market, but they are filled with sugar and simple carbs that are terrible for anybody with a blood sugar problem - and in this country that is about half of us.
This time I was researching for a way to more economically address the fact that so many nutrients are very poorly absorbed from the gut so we end up having to take a lot more of the nutrients to get any effect. I had read that an industrial process called liposomal encapsulation could increase absorption by a thousand percent, so I started doing internet research to find out how this process works and if there is a way that I could do it at home.

What is liposomal encapsulation? Imagine a hollow bubble of a substance that travels easily through cell walls. You fill that hollow bubble with the nutrient and now that tiny bubble will carry your nutrient through cell walls and deliver that nutrient directly into the cell interiors. Liposomes are super tiny so they travel through the blood stream easily and cross the gut lining easily.
In industrial settings liposomes are made at very high pressures - well beyond what is available in a kitchen. But a little more research revealed a research paper written by a fellow attached to a research foundation in Australia that said you could form liposomes at home using the high impact force generated in an ultrasonic cleaner. This uses the same kind of technology as is used in the therapeutic ultrasound in my office. Normally ultrasonic cleaners are used for cleaning jewelry and small machine parts.

This particular author was interested in increasing the absorption of vitamin C. Much research was performed by Linus Pauling 40 years ago on high dose intravenous C for fighting cancer and many other diseases. His research was ignored after other scientists tried to reproduce his results with vitamin C taken orally and could not get the same results. Vitamin C has a limited absorption through the gut and when you take too much you just get diarrhea instead of high blood levels of C. Without using intravenous injections of C the dose in the body simply could not get high enough to do any good.
With liposomes research has found that you can triple the levels of vitamin C in the blood when you take the C encapsulated in the liposomal material - high enough to get the kind of results that were found with injections of C. One recent study on cancer used liposomal C both alone and combined with standard chemotherapy. Compared to chemo alone the addition of liposomal C greatly increased the effectiveness of the treatment. The liposomal C by itself was found to be as powerful as the chemo alone, but combined together it really wiped out the cancer in most of the patients.
The study I just mentioned was partially funded by a manufacturer of liposomal C. This is the sad reality of scientific research. It is not the high minded quest for truth anymore. Research costs money and if there is no money to be made from doing research then it just does not happen most of the time. Linus Pauling's research was independent but no one wanted to hear what he had found because vitamin C is cheap. No companies want a cheap cure for cancer. There is no profit in that. But they will spend a ton of money trying to find a very expensive partial cure - just cure enough to require long term treatment with some drug that costs thousands of dollars per dose. The company selling the liposomal C is not on the profit level of the pharmaceutical companies, but at a dollar per 1 gram dose there is some definite profit to be made... enough to fund a little research to support your product. My interest is in reducing that $1 per gram cost. Pure vitamin C powder can be had for only 2 ½ cents a gram. The goal now is to make it liposomal. Liposomes are easily made from lecithin in an ultrasonic bath. First I got hold of an ultrasonic cleaner

Then I went to the health food store (Elliott's) and bought some non-GMO lecithin.
The first step is to dissolve the lecithin in water, either slowly over a couple hours in cold water or quickly in hot water in a blender. I used 6 tablespoons of lecithin in 2 cups of purified water that I heated on the stove in a stainless steel pot. I put the water and lecithin into my blender in a couple seconds later I had a nice smooth tan colored liquid. Next I dissolved 2 tablespoons of vitamin C powder in 2 cups of cold purified water by simply stirring it into the water well. I then added the vitamin C to the blender with the lecithin water and blended the whole thing for a half minute. I then poured the mixture into the ultrasonic cleaner and turned it on for 480 seconds - the cleaners longest setting. While it was sitting there buzzing I would stir the mixture with a plastic spoon. I repeated the ultrasound two more times and then poured the treated mixture into a glass mason jar for use. I have done this several times now. Not all the vitamin C gets encapsulated, so the final brew is rather sour. One time I added 2 teaspoons of my 8X sugar replacement and some lemon flavor extract to the mix to make it more tasty. Another time I added enough aluminum free baking soda to neutralize the sour taste and then added the 8X and some natural caramel flavor. Each 4 cup batch has about 28 grams of C, so I take about ¼ cup each day either straight or mixed into my morning smoothie.

I have also been playing with using this process with glutathione and curcumin. Anything that will dissolve in water even briefly can be encapsulated in this way. In the case of the vitamin C the literature I have read says that it normally is only absorbed about 19%, but with liposomes that number goes up to 97%. That is quite a big jump.
So any of you that have a little mad kitchen scientist in you or are motivated by other personal health needs, I invite you to make your own hi tech nutrition at home.

Here is a wonderful modification recipe for my Miracle Protein Bread sent to me by Suzanne Wright
Yummy Chocolate Bread
made from Dr Dave's Miracle Protein Bread Mix.
1 - pkg of Dr Dave's bread mix.
1 - pkg of Dr Dave's Chocolate Flavoring for bread.
1 to 1 1/2- cup chopped raw nuts (I usually use pecan or pecan & cashew). 1/2 cup or so of chopped dates.
½ cup melted coconut oil.
3/4 cup of apple juice, room temperature.
3/4 cup of water. (Or for richer flavor use 1 cup of apple juice then 1/2 cup of water...with your coconut oil it will add up to the required 2 cups of liquid).
Combine the bread mix with the flavoring and while mixing then add the melted coconut oil and the room temperature apple juice & water. Mix thoroughly. Then add the dates & chopped nuts. Your mixture may be a bit thick because of the nut powder from the nuts you chopped. If so add in small equal amounts of apple juice & water ( or just apple juice) until all is mixed well. I use an 11 x 71/2 x 2 inch pan & line with nonstick foil so as not to have batter stick to pan. Cook at 350 degrees for about 45-50 minutes. Check after 30 min or so with cake tester to make sure insides are cooking nicely. After removing from oven lift out using the edges of the foil & allow to cool for a while before cutting. Store in fridge. I also cut this into crouton sized pieces & put in the dehydrator to dry into crunchy, slightly chewy snacks!!

And here is a clever way she makes the bread sandwich size:
Changing up my Dr. Dave's bread: to allow for variety I began to cut my Dr. Dave's Protein Bread on the diagonal. After baking the bread in an 8 x 6 x 2 size pan I remove bread from pan & allow to cool for about an hour. I then turn the loaf on its side and trim off the end with a diagonal cut. I continue to cut using the opportunity of the diagonal cut to make my bread slices as large & thick as I like. Then I dehydrate them to produce a light crispiness on the surface of each slice. For me, this has allowed me more variety in sandwich making and the dehydration produces a texture & flavor that suits my soups, sandwiches & the drippings from roasted meats.

Omega 3's increase brain networks

Rhesus monkeys have very similar brains to humans as found on functional brain imaging. In comparing the brains of monkeys raised on high levels of the omega 3 oil DHA compared to monkeys raised on low levels of DHA tremendous differences in neural connections between different brain regions was found. There was much more connection between the brain regions in those monkeys that had high levels of DHA. The next step is to analyze the behaviors of the deficient connection brained monkeys to see if it correlates to things like autism of ADHD in humans. Bottom line - eat more high DHA fish oils to help your brain form the connections it needs to work. Especially be sure to give these to young kids as their brains are forming.

Mammogram benefits questioned 
The results of a 25 year followup study concludes that mammography does not save any additional lives from cancer compared to simple physical exams. Why would that be since obviously mamography does find cancer? The study concludes that 22% of the time mammography finds cancers that would never pose a health risk - some cancers are so slow growing that they never become a problem. Other cancers are so fast growing that by the time the mammogram detects the cancer it is already too late. The medium speed cancers are equally well found on manual exam as mammogram so no advantage is found for the mammogram. The net result is that there is no advantage to getting a mammogram over a normal physical exam. The best cancer detection is regular self exams. An added high tech method is thermography which measures the heat patterns of the breasts as a vewery early detection method for cancer screening. This works because cancer stimulates a big growth of new blood vessels to feed it causing a hot spot to show up where the cancer is about to grow. To be accurate though you really need a baseline thermogram taken before you have any cancer that they can compare temperature patterns to.
