What is up with salt?  Historically salt has always been considered a precious commodity yet these days everyone is worried about eating too much salt.  What is the truth about salt?

Salt was man's first condiment and the best known method for preserving foods for thousands of years.  Salt has been the basis of wealth for tribes with access to salt throughout history.  Archeological findings have dated the harvesting of salt through boiling salty water to over 8000 years ago.

Why all the fuss over a food condiment? Salt is far more than a way to make food taste better.  Salt is an essential nutrient for survival.  You will die without it.  Throughout nature, animals go to extraordinary lengths to secure a source of salt. 

Why is salt important?  Salt is a combination of two elements: sodium and chlorine.  Sodium is an electrolyte.  What does that mean?  It means that sodium, along with the other electrolytes like potassium, calcium, magnesium, and chloride; create the electricity our body needs to run so many of its basic functions.  Yes you read right - electricity.  Our cells function like little batteries by keeping certain electrolytes outside the cells and others inside the cell.  This separation creates an electric charge that is used to make various things happen, like muscles contracting or nerves firing.

Our kidneys and our adrenal glands control exactly how much of each electrolyte is present in the fluids around the cells and inside the cells.  The adrenals produce special hormones that tell the kidneys just how much sodium to save and how much to let go of n the urine.  This is the first place where the societal confusion is created.  Our adrenals may produce too much hormone or not enough hormone depending on our levels of stress, and how long we have been under stress.  Acute stress increases the hormone levels causing an increase in the amount of sodium retained in the body.  This is to increase the electricity in the body for fighting or running away.  Blood pressure also increases to get more blood to the muscles.  When your body is acting like it is under acute stress, eating excess salt supports this process and helps your blood pressure go up.

On the other hand, chronic stress has the opposite effect - decreasing adrenal hormones and causing the body to lose sodium through the kidneys.  This lowers our "body electricity" making us tired and slow.  People in this condition can eat lots of excess salt and nothing happens because it is all lost through the kidneys.

In healthy people, the process between the adrenals and kidneys expertly controls their sodium level.  Thus, healthy people have no problem with salt consumption. 

Government bureaucracy hates reality like this.  It demands that reality be simple so that it can make clear policy statements.  It aggressively avoids any recognition that everyone is different, and their reaction to salt will also be different.  Government wants to emphatically state that there is a true and correct amount of salt you and I should eat and no more.  Sorry government - your viewpoint is a lie - we are all different and our needs are equally different.

So now that we get it that each of us has a different need for salt, and since that need is tied to stress, our individual need will personally vary day to day and year to year.  It is a good thing our body is managing our salt levels.  That said, be sure that you get some salt every day.  Occasionally I get a patient who is terrified of salt and is aggressively avoiding it.  They destroy their health when they do this.  Their ability to digest protein drops dramatically as the chlorine part of the salt is used by our stomach to make the hydrochloric acid to break down protein so we can assimilate it.  Their muscles get weak and their brains don't function right.

Let's look a little closer at the stuff we call salt today.  Natural, real salt is about 84% sodium chloride and 16% other mineral salts such as magnesium and potassium.  The mixture of all the different minerals is a vital part of the health benefits of salt.  But this is not what we buy when we go to the store and get our typical box of salt.  That salt has had all the other minerals removed from it and other chemicals added to make sure it flows nicely out the salt shaker.  Natural salt is colored or grey, depending on the levels of the minerals in it, not white.  White salt is a marketing tool like white flour - it makes the product visually more appealing so they can sell more.  It is definitely not as healthy for you.  The other minerals in natural salt tend to attract moisture from the air so the salt feels moist and likes to get lumpy and is hard to pour.  This is the real reason they remove the other healthy minerals from the salt - so it will stay dry and not lump up as much. 

The most common additive used is called sodium ferrocyanide or yellow prussiate of soda.  Although the name lets you know that it is made from the poison cyanide, the cyanide portion is chemically bound and won't release cyanide gas unless it comes in contact with a strong acid.  Wait a minute! We are eating this stuff.  This means that it goes into our stomach where one of the strongest acids on earth - stomach hydrochloric acid - pours out to help us digest our food.  That means every time we salt our potatoes and steak we are releasing hydrogen cyanide gas into our system!  Because sodium ferrocyanide is stable and non-toxic while sitting in a jar, our government figures it is ok to put it into food.  I really have to wonder from which end of the spine these people are thinking.

Because salt is so universally consumed, governments have decided that it makes a great way to dose people with chemicals they believe we need.  Iodine is the most common "added health ingredient" in salt in our country, and it did do a great deal of good in decreasing goiter disease in certain areas of the country.  But beware; iodine can be a big problem for people with autoimmune thyroid problems (now the most common type of thyroid problem in this country.)  Other countries will add other chemicals like iron, fluoride, and even folic acid to counter specific regional deficiency disease problems.

Just so we are clear, food manufacturers and processors do not use natural salt. They use the white stuff that has been made to pour nicely so it will go through their processing machinery easily.  Don't be fooled by the marketing term "sea salt" thinking that is the same thing as natural salt.  Most salt comes from seawater.  So the "sea salt" on your organic potato chips is a scam.  The potatoes may be organic, but the salt is anything but natural.  Besides, the instant they deep-fry the potato in vegetable oil it becomes a toxic and rancid poison.  And yes, I know, they taste delicious.

So what do we know so far? 

Salt is fine for most people and levels are carefully regulated by the body.
If you are under acute stress, salt may help raise your blood pressure.
If you are under chronic stress, you may need extra salt.
Table salt probably has poisons in it.
Real salt is not white and tends to be moist and sticky.
Commercially prepared food is full of the unhealthy kind of salt.


Personally I use Himalayan pink salt or Celtic grey sea salt I pick up at Elliott's Natural Foods.  I have to use a plastic salt shaker with big holes in it that I stole from another herb blend.  The natural salt not only clogged up my pretty copper salt shaker holes, but it also corroded the metal. In this case, I had to choose health over aesthetics. 

I hope this clarifies some of the confusion over salt.  Simply put, if you have high blood pressure cut back on your salt and see if that lowers it.  If you have low blood pressure you probably need more salt.  Eat healthy salt.

Finding the new location is very easy.  Coming from highway 50 up Sunrise Blvd, you turn left and go up a block.  We are on the right hand side - the building just past the Subway Sandwich shop.  If you are coming down Sunrise from the Mall area then just turn right on Fair Oaks Blvd and up a block on the right.
 
If you are coming from the Roseville area you could come down Sunrise Blvd, but that is a long trek.  It is probably shorter time wise to come down Auburn Blvd - San Juan Ave like you have been for the Sunset office, but instead of turning left at Sunset, keep going straight 3 more lights to Fair Oaks Blvd and turn left.  Go down 2 lights to New York Ave, go through the intersection, and immediately turn into the turn lane once the center divider ends.  We are on the left.

Vitamin D slashes blood pressure and CVD risk

A large scale genetic study has confirmed that low levels of vitamin D can trigger hypertension and heart disease.  Studying the genetic code of 155,000 people from all over Europe and America it was found that for every 10% increase in vitamin D level the chance of developing high blood pressure decreased 8.1 %.

Food Fraud

Finding good food to eat is hard enough, without having to deal with foods we think are real and wholesome actually being fake.  Here is an article by Prevention Magazine about some of the foods right now that are being adulterated with cheaper substances like expensive imported olive oil actually being adulterated with much cheaper (and more dangerous) vegetable oils or honey being adulterated with corn syrup.

Fly larva for protein

How about this?  A handy-dandy counter top kitchen gadget for growing your own protein - from fly larva.  Yes, maggots are good protein coming in at about 42% protein.  That is almost twice as much as steak.  Plus there are good levels of calcium and other nutrients.  How much can you actually produce you ask?  Try over 5 pounds in just two and one half weeks.  Why would anyone ever do this you ask?  Because like it or not, with the population growth world wide there will soon simply not be enough protein to go around.
