Foods that cause Diabetes
Hi ,
Diabetes is big and getting bigger every day. It has been estimated that the medical costs associated with diabetes alone are around half a trillion dollars with over 4 million deaths from diabetes and its complications occurring every year. There were an estimated 35 million people with diabetes in 1985. By 1995 that number had shot up to 135 million. That number is expected to exceed 300 million within the next 10 years. How can this horrible disease be increasing 10 fold in only 40 years?
It used to be thought that diabetes was primarily a genetic disorder. That idea had to be dropped when the rates quadrupled in the 10 years between 1985 and 1995. Genetic disorders don't suddenly rise like that. So we have to look at the basic rule of physical expression - genes X environment = expression. The genes aren't changing in such a short time span so that only leaves some environmental change that is causing the rise in diabetes.

The biggest environment change that our bodies have endured is a change in our diet. Pollution has not grown that much in the last 20 years. Weather is not that much different. Social stress is not that different. So what is different?
Recall that we generally classify two kinds of diabetes - type 1 and type 2. Type one is a lack of insulin due to pancreas failure to produce insulin and type 2 is the body refusing to pay attention to insulin (insulin resistance). (Insulin is the hormone that opens the doorways on the cells to let nutrition into the cells.)
Epidemiologists have found one environmental factor that perfectly matches the rise in type 2 diabetes in every culture - sugar consumption. As any population consumes more sugar the rates of diabetes rises at the same rate. A book I am currently reading discusses the probable chemical cause based on a lot of excellent research. The real culprit appears to be fructose (sometimes called fruit sugar). The sugar we eat is composed of 1 molecule of fructose bound to 1 molecule of glucose. It seems to be the fructose that is the bugger. It causes the liver to produce uric acid, which in turn causes the body to turn insulin resistant. Uric acid also has a load of other negative effects on many other pathways in the body. This is why high fructose corn syrup is taking a lot of criticism lately as a cause of obesity and diabetes. But high fructose corn syrup is only 55% fructose compared to the 50% of regular sugar (or the 80% of agave syrup.) So regular sugar is not any better than high fructose corn syrup. Both will kill you.

But this does not explain the rise in type 1 diabetes. It used to be that type 1 diabetes appeared in childhood. In fact it has long been called juvenile diabetes. But now we are seeing an epidemic of late onset type 1 diabetes. People in their 30's, 40's, and 50's are coming down with pancreas failure to produce insulin. It seems everyone's pancreas is suddenly being attacked by their own immune systems.
Two main culprits seem to be emerging as the cause of our immune systems going crazy and attacking us - milk proteins and grain proteins. Specifically we are talking about casein and gluten. These sticky molecules are getting into our blood streams and sticking to the cells in various parts of the body and tricking our immune system into thinking that the tissues they have stuck to are enemies. This auto-immune diabetes is now also crossing over to type 2 diabetes with 20% of people diagnosed with non-obesity-related type 2 diabetes actually having latent auto-immune diabetes.

Why now? Humans have been eating grains and milk for 10,000 years. Well yes and no - we have, but not the same grains or milk we are getting today. We process our grains in such a way as to make them hugely more allergic than natural grains. Why? Because it makes the flours they produce work much better in our factory bread making. The same has happened to our milk supply. People that drink exclusively raw whole milk do not show the immune system problems that folks drinking pasteurized, homogenized milk show up with. Our desire to make our food supply more convenient has also poisoned it.
Another recent trend is the rise of fast food. Prior to 1985 fast food was a rare indulgence. Now it has become a way of life for large numbers of people.
It is interesting to note that when researchers want to study type 1 diabetes in the lab with mice studies, they produce diabetes in the mice by giving them a large dose of MSG when they are young. Within a day the mice now have diabetes. MSG is in almost every fast food item. (Fast foods include quick snack foods from the grocery store like chips, cereal, breakfast bars, cookies, and candy.)
The science behind these new discoveries is amazing and intensely complex, but answers are unfolding. For instance Alzheimer's disease is now recognized as a type of brain specific diabetes. 60% to 70% of people with diabetes have mild to severe forms of nervous system damage. Diabetes also destroys the cardiovascular system. The risk of stroke is 2 to 4 times higher in people with diabetes.
The common process underneath the damage in insulin resistance, inflammation, hypertension, autoimmunity, chemical intolerance, leaky gut, obesity, and more is the production of a little chemical character called NF kappa beta (NF-kB). As NF-kB increases in our cells it initiates all kinds of damaging havoc. If we could inhibit NF-kB we would have a big handle on a whole host of diseases. Researchers have been trying to synthesize a NF-kB inhibitor for some time now, but it is proving to be quite a challenge. If they succeed, it will be the greatest wonder drug to come down the pipe in a long time.
Why do I bring this up? I bring it up because there are already natural herbal compounds that do inhibit NF-kB quite effectively. There have been literally thousands of hard core scientific studies on these substances and they are used in research on NF-kB. But no one cares about natural substances in the scientific community. The big money is in patent drug development. You can't patent natural substances. But as a patient or chiropractor, I don't care about the big pharmaceutical profits. I just want what works, and natural is a bonus.
I am talking about Resveratrol and Curcumin. The studies are in and they both work to inhibit NF-kB and fight the consequences of inflammation right down to a genetic expression level. These herbal compounds have a whole body impact. They fight inflammation everywhere - brain, joints, organs, glands, skin, everywhere. From what I have researched on absorption and utilization (always a problem with natural compounds), the Apex products Resvero-Active and Tumero-Active give you the best bang for your buck. They still are not cheap, but the cost is a drop in the bucket compared to what a patent drug equivalent will cost if they ever invent it.
So, what is the big picture take away from this newsletter.
1. Don't eat table sugar in any form ever
2. Don't eat high fructose corn syrup, agave, honey, or excess fruit
3. Don't eat baked goods made from grain flours
4. Don't eat pasteurized or homogenized dairy products
5. Don't eat fast foods
6. Don't eat MSG
7. Don't eat foods that increase uric acid levels
8. Do use highly active resveratrol and curcumin daily
We are each potentially facing one or more of the diseases of modern civilization, which are a consequence of our horrible eating habits. If we don't want to end up spending the majority of our time and attention on our aches, pains, and suffering as we age, we have to change our ways. The sweet attractions of modern living have to be seen for what they really are - poisons. Our delicious sweet, starchy, creamy, and deep fried convenience foods need to be thrown in the trash and replaced with fresh foods freshly prepared.
