Fats Don't Make Us Fat,
Carbs Do!
Hi ,
I have written many times about the negative effects of simple carb foods on our health. Sugars, flours, sodas, candies, breads, and other starchy foods are simply killing us slowly. Our bodies were never intended to process these kinds of foods. They cause inflammation, obesity, heart disease, diabetes, osteoporosis, dementia, in fact practically all the diseases of degeneration are due to the over consumption of these foods. Truth be told, most of us can't really handle these special dietary poisons more than a couple times a month at best. If you already have diabetes, pre-diabetes, or low blood sugar the tolerance you have for these foods is zero.

One piece we need to add to the picture above, is that carbs are not the only thing that will drive up insulin - overeating also drives up insulin. No matter what you are eating, if you overeat your insulin levels go up... even if what you are eating is just lettuce. When insulin goes up, anything hanging around in the blood stream starts moving into storage in your fat cells.
In fact, it is this overeating and/or carb eating drive of insulin that caused fatty foods to be linked to weight gain in the first place. When fats are eaten by themselves, or with protein or fibrous vegetables in small quantities, the fats stay in the blood stream until they are burned up for fuel. But when the fats are eaten with carbs that drive the insulin levels up (or simply overeaten), then the insulin will cause all that fat to be stored in our fat cells. Our favorite ways of eating fats are with carbs - like bread and butter, doughnuts, muffins, cookies, ice cream, chips, even ribs with BBQ sauce. All these combine sugar or carbs with the fats. In that form, the fat does make us fatter (along with the carbs being turned into fats and stored as well.) If you want to lose weight, never eat fats and easily digested carbs together, and never ever overeat.
Yes, I know from personal experience how hard it is to kick the sugar and carb addiction. The same brain pathways responsible for cocaine and alcohol addiction are responsible for our sugar and carb addiction. In fact alcohol is really just an altered form of sugar. But when I looked at and started feeling the degenerative effects they cause, my motivation to kick the sugar habit got strong enough to make me successful. You can do it too.

Tofu consumption causes brain atrophy
I have been warning patients about consuming unfermented soy products ever since I came across farm studies on baby pigs failing to thrive when fed soy as a feed source 20 years ago. Soy contains many anti-nutrients that have to be exposed to very high heat for long periods of time before animals can use them as a feed source. Tofu has not been treated to destroy these anti-nutrients and is not a human food in my opinion. It appears the science is finally starting to support my opinion. From a very long study started in 1965, researchers can now demonstrate much higher levels of brain atrophy later in life in those who ate tofu 2 or more times a week when they were younger.

Dehydration causes crankiness
A loss of only 1.5% of your body's water can lower your mood, energy, and ability to think. Your thirst mechanism does not even turn on until you have lost 1-2% of your water level, so you could be affected by dehydration before you even get thirsty. Mild dehydration has been found to increase anxiety, tension, fatigue, poor memory, and decreased ability to pay attention... in short it makes you cranky. So before you reach for the mood elevators, try a big glass of water. Staying hydrated is part of staying healthy.

Chiropractors and Exercise Are Better than Drugs
According to a new National Institutes of Health study, Chiropractic and exercise both do much better at treating and relieving neck pain then traditional medical procedures. While this is not news to my patients, it is nice to see research validating what we experience every day.
