The winter Solstice is upon us - the shortest day of the year. In ancient times this was a day of prayers and fasting (or sometimes feasting) as it marks the end of the solar year and the beginning of a new year. I thought I would celebrate by sharing some rainy day pictures of my neighborhood just to highlight how much beauty there is all around us if we just stop and take it in. Enjoy.
Mock Candied Yams
For those of you that are boldly holding to a low carb holiday food fest, here is a treat that Ellen invented for our early Christmas dinner last weekend - A Mock Candied Yams dish. It was amazing, and no one was able to guess the real ingredients.
In a good pot put:
14 medium carrots - peeled and sliced
3 medium turnips - peeled and sliced
1 sweet onion - sliced
3 cups water
3 Tbs. Chicken Better than Bullion - low sodium
cover and bring to a simmer.
Cook till tender.
Transfer the veggies with a slotted spoon into the blender then add 1 cup of the liquid from the pot of vegetables.
Blend to a puree
Add 2 Tbs. Ghee and 1/2 tsp ground Nutmeg and blend together.
Pour this all into a casserole dish.
To make this dish really festive we decided to put a crumb crust on top of the vegetable puree. We planned this step a day in advance. I took a package of the Miracle Protein Bread and mixed it up as per the instructions, then added 1/4 cup Ghee, 1/8 cup Super Sweet sweetener (equal to 1 cup sugar), and 2 tsp of french vanilla. I cooked up the bread the usual time.
The result is similar to a buttery pound cake. I then took 6 slices of the bread and put them in the dehydrator to dry. By the next day it was crispy and ready to crush into crumb sized pieces to put on the top of the Mock Candied Yams. With the topping in place 1 hour before the meal, I put the casserole pan in the oven at 200 degrees to slowly warm up to serving temperature.
It truly does taste like candied yams, but with only a small fraction of the carbs in the real thing.
