Hi ,
A couple weeks before Christmas I spent 3 days in a conference room in the San Francisco Airport Hyatt learning about the latest information on diagnosing and treating thyroid conditions. We are talking about stuff that is 10 to 20 years ahead of the curve for conventional medicine. This was fascinating stuff (if you are a medical nerd like me.) The thyroid controls the basic energy production for absolutely everything that ever happens in your body. Every cell in your body responds to thyroid hormone and if the levels of thyroid hormone are off even a little bit, your body just can't work right.
The biggest take-away from the seminar is that at this time in this country most thyroid problems are actually immune system problems. Our immune systems are attacking our own bodies, and one of their favorite targets is the thyroid gland. This is known as Hashimoto's disease. Unfortunately this is rarely checked for in routine lab blood work... even when a patient has obvious symptoms of a thyroid problem. Do any of these symptoms feel familiar to you?
Too little thyroid hormone activity may make you:
- Tired, sluggish
- Feel cold - hands, feet, all over
- Require excessive amounts of sleep to function properly
- Increase in weight gain even with low-calorie diet
- Gain weight easily
- Difficult, infrequent bowel movements
- Depression, lack of motivation
- Morning headaches that wear off as the day progresses
- Outer third of eyebrow thins
- Thinning of hair on scalp, face or genitals, or excessive hair loss
- Dryness of skin and/or scalp
- Mental sluggishness
Or too much thyroid hormone activity can give you:
- Heart palpitations
- Inward trembling
- Increased pulse even at rest
- Nervousness and emotional
- Insomnia
- Night sweats
- Difficulty gaining weight
Notice I say thyroid hormone activity... this is the key to cutting edge understanding of thyroid problems. There are 10 metabolic steps involved in thyroid hormones doing their jobs properly, and only one of those steps is typically ever checked by conventional medicine. The doctor teaching the seminar has identified 24 common problem patterns with thyroid hormone function and figured out how to test for and treat most of these patterns. The second big take-away from the weekend was that since thyroid problems are usually autoimmune problems, is understanding that autoimmune problems don't attack just one tissue in your body, they attack many. So a thyroid hormone problem is usually just the tip of the iceberg. Autoimmune diseases are the up-and-coming epidemic for the 21st century. The levels of hormone mimicking chemicals in our modern food chain and environment are really confusing the heck out of our bodies. Our toxic world is making our bodies flip out and start attacking our own tissues.
What can we do about this? The Health Challenge series I ran all last year taught you how to reduce the poison load on your body in general. Getting 4000 to 10,000 units of vitamin D3 each day as well as boosting your body's supply of glutathione to protect your cells from autoimmune damage supports reducing immune system reactivity. (Glutathione has to be either injected or taken as a transdermal cream - as in Oxycell cream available at the office - as it is destroyed by the digestive tract.) Specialized specific protocols are utilized for each of the 24 thyroid patterns we learned about during that weekend.
Important notice: Iodine, the traditional remedy for thyroid problems, actually makes autoimmune thyroid conditions much worse!
Determining if you have a thyroid hormone problem is done through lab blood work. Typically your doctor will not order the tests needed (TSH, T4,T3, T3 uptake, TPO antibodies, and TGA - anti thyroglobulin antibodies) other than the TSH test, however I can order them if you need them done. I get a discount at Labcorp and can order all the needed tests for only $135.
Why don't doctors check for these problems? Because why would you go looking for a problem you can't offer any solutions for? Doctors limit themselves to treating only with approved pharmaceuticals, and there are no pharmaceuticals developed yet for most of the disturbed pathways we are talking about. Right now the only thing doctors have they can use for thyroid problems is replacement thyroid hormone. Their answer for autoimmune trouble is the drug prednisone, which creates many more problems than it solves. They don't have anything for the pituitary, hypothalamus, or adrenal problems causing the thyroid problems. Nor do they have anything for problems with the carrier proteins that move the hormone to the cells, or for the enzyme problems with converting the hormone to its active form, or for problems with the receptor sites recognizing the hormones. Natural medicine does have support today for each of these issues - and so will the drug industry in another 20 to 30 years...but who wants to wait for them? So yes there is hope. Some of the life changes needed to tackle some of the different thyroid problems can be challenging, but well worth the effort. Zinc - the Enzyme co-factor
Zinc is more valuable
to the human species than gold. It is necessary in over 600 different
biological actions within our bodies. There are many causes of zinc
deficiency but the most common is the high use of grains in our diets
as the phytates in the grains can bind zinc so that it won't be
absorbed - so vegetarians particularly need to watch out for low zinc
levels. The list of possible zinc deficiency symptoms is long as it is
involved in so many different body functions.
behavioral and sleep disturbances
dandruff
delay in wound healing, frequent opportunistic infections

As you can see zinc is pretty important. Zn2+
ions are nature's strongest antioxidants, far more so than vitamins C
and E, and much safer than selenium. Zinc is also used to strengthen
cell membranes and close pores to protect the cells from cytotoxins.
So how much do you need? Generally around 15 mg is sufficient for a
daily intake although in therapeutic doses to correct deficiency states
up to 10 times that amount may be used. Be careful dosing up on zinc
heavily as it will deplete copper in your body which will create
another set of symptoms.
Aside from symptoms, are there any simple tests for low zinc levels? Yes. Zinc affects taste, especially the taste for zinc. A zinc solution we have in the office can be used by simply tasting a sample. We are looking to see how strong the solution tastes. If you are very low in zinc it will taste like water. If your zinc level are good the liquid will taste very strong. This is a very easy way to discover if you need zinc, and we offer the test for free in the office.

Trim Challenge
I decided to start my New Year's challenge 3 days early. I figured that if I truly wanted the results I say I do then I would not wait until the parties are over. What good is a commitment that does not apply during a time of celebration? I have gotten completely off gluten, dairy, and corn and now I am cutting way back on the carbs and fats. I have either my high fiber protein shake with lots of added glutamine to help heal the gut, or a vegetable soup for two meals a day. Salad and some protein serves as the third meal. The scales tell me the inflammation is coming down as the excess inflammatory water weight is dropping off. So far so good.

Fructose increases risk of diabetes, heart disease
Finally, researchers are putting out information on what I have been telling people for the last 15 years. It is the fructose in sugar and corn syrup that is the bad boogie man. Sugar is half glucose and half fructose. Corn syrup and the new "natural" Agave Syrup are even higher in fructose. Both will make you gain weight when eaten in excess, but where the fat appears is the critical aspect to the dangers of excess weight. Fructose puts the weight in and around the organs, heart, and blood vessels, while glucose only puts it in the normal fat deposits under the skin. A recent study on agave syrup use with diabetics had to be stopped permanently because of the negative effects. Personally I suggest avoiding sugar altogether and using stevia or erythritol for sweetening since sugar is just empty calories.
To absolutely understand just how toxic fructose is I strongly urge you to watch this lecture by an endocrinologist from UC San Francisco. It is long but it just may save your life. He shows how sugar has the exact same effect on your liver as alcohol...a can of coke is no different than a can of beer on its effect on the liver, heart disease, hypertension, obesity, and type 2 diabetes.

Tai Chi for the arthritic knee
I have been a proponent of Tai Chi for strength, flexibility, and balance for many years. I especially like it because it does not damage the joints with fast movements or impacts. A study was performed recently on the effectiveness of Tai Chi for arthritis. The study compared two groups of people age 55 or older who had osteoarthritis of the knee. One group met twice weekly for Tai Chi classes. The other met twice weekly for general wellness instruction and
stretching exercises. Both groups were asked to practice their
exercises at home for at least 20 minutes a day. At the end of their 12-week course, people in
the Tai Chi group had a 75 percent drop in their pain, on average, and
a 72 percent improvement in their ability to do everyday tasks. The stretching group had mild improvements, but nothing like the Tai Chi group had.
There are many Tai Chi classes in the Sacramento area, but even easier is to pick up an instructional DVD or video tape that you can follow along with at home. No special equipment is needed and most anyone can do this. If you are looking for a really good New Years resolution, try daily Tai Chi.

This is weird, but I took this intense thyroid seminar on the latest cutting edge information on testing and treating thyroid hormone disorders two weeks before Christmas. I then wrote the lead article for this newsletter between Christmas and New Year. What do you do when you've got one of those favorite holiday dishes that is straight out of 1959 - you know the ones - cardiac arrest in a bowl - a combination of every deadly "food source" ever created. One of my patient's - Catherine - gave just such a recipe to try this holiday. This baby is made with a full bag of marshmallows, mayonnaise, cream cheese, whipped cream, 2 flavors of sugar filled Jell-O, canned crushed pineapple, and raspberries. I remember this recipe (or something very similar) gracing our holiday table in my Mom's new Tupperware when I was a kid.
What do you do if you want the good old days without the cardiac arrest? Adapt and get creative. You swap out the marshmallows by making your own sugar free marshmallow cream. You swap out the mayonnaise with a light canola mayonnaise or even better a grapeseed oil mayonnaise. Use a goat cheese log for the cream cheese, coconut milk for the cream, and good old Knox gelatin for the Jell-O. It is still best to use the canned pineapple as fresh pineapple will dissolve the gelatin because of the active pineapple papain enzymes in the fresh (although if you really had nothing but time you could crush fresh pineapple and cook it to destroy the enzymes). Fresh or frozen raspberries we can probably keep just as is.
1 1/2 cups water
1 cup 2X erythritol/ stevia blend
2 envelopes unflavored gelatin
1 teaspoon vanilla
1/4 teaspoon salt
2 more packages Knox gelatin
1 tsp lemon flavoring
1 tsp Raspberry flavoring
2 cups water
8 oz soft goat cheese
½ cup light or grapeseed mayonnaise
1 cup coconut milk
1 large can crushed pineapple
24 oz raspberries - fresh or frozen
Step 1
Soften 1 package gelatin by soaking in ¼ cup cold water for a few minutes. Then dissolve in ¾ cup boiling water. Add ¼ cup Dr. Dave's Sugar (erythritol - stevia blend) and 1 tsp lemon flavoring. Set aside for a bit.
Step 2
Mix 1 ½ cups water with ½ cup erythritol/stevia blend and salt in a saucepan. Cook till it boils to make a syrup then set aside. Add vanilla.
Step 3
Put 2 packages of gelatin into a deep bowl and add the syrup you just made.
Step 4
Beat with an electric mixer for 12 minutes until very thick and
tripled in size. It may take longer - the foam should form soft
peaks. Set aside momentarily.
Step 5
In a big bowl blend together with a mixer the goat cheese, mayonnaise, coconut milk, and pineapple. When well blended add in the lemon gelatin mixture then fold in the foamy marshmallow cream mixture. Pour mixture into a 9x15 pyrex casserole pan and put into the refrigerator to cool.
Step 6
Soften the last package of gelatin in ¼ cup cold water then dissolve in ¾ cup boiling water. Mix in ¼ cup Dr. Dave's Sugar and raspberry flavoring (if you can't find raspberry flavoring then crush 6 oz of the whole raspberries and add that instead.) Add the whole raspberries and let mixture cool at room temperature.
Step 7
The pan in the fridge will be cooling faster than the raspberry gelatin mixture. When it gets almost set, then pour the raspberry mixture over the top of the lemon mixture. Cover the pan and return it to the fridge to fully set up.
MAKE THIS DISH THE NIGHT BEFORE YOUR PLANNED MEAL
There you have it, a genuine healthy fake 1959 killer Holiday Goo!
